I’ve been obsessed with roast chicken for years. It’s just one of those things that’s always good, but is sometimes crazyfantastic. This was one of those times. This is also one of those recipes that sounded so damn appealing that food bloggers went wild with it. Chicken Toast everywhere!

Okay, so the cast iron skillet is plainly key. And was that seasoned breadcrumbs you put on top? Or seasoned salt? I couldn’t tell which….

Hey, K,
YES! That was seasoned salt. Specifically, it was my version of “green salt”. I make a huge batch and seal it in jars and put it on pretty much everything. It’s main use, though, is roasted and seared meats. Wowza.
Rosemary, thyme, marjoram, garlic, tarragon, parsley and sage and cilantro whizzed together with a hand blender with kosher salt. Basically I took Blake’s recipe and added more herbs but halved the salt.
It makes everything (foccacia, roasted chicken, seared steak, pork chops, popcorn, omelets) better!
